Let me introduce you to the first soy sauce ever to be micro-brewed in the United States. Former chef Matt Jamie calls his creation ''Bluegrass Soy Sauce'' because he makes it with non-GMO Kentucky-grown soybeans, wheat from a Kentucky farmer whose family has been plowing their land since before the Civil War, and limestone-filtered water from a nearby spring. He then brews and ages the sauce in old bourbon barrels in Louisville. The result is unbelievable. Each bottle is hand-lettered with the number of the batch and individual bottle.
